With the deep umami of fermentation and a simple yet refined flavor, it’s an easy dish you can enjoy at home.


Easy-to-make quantity:

 

This recipe uses 450g of salmon and about 10% of that weight in salt koji for marinating, which would be approximately 3 tablespoons.

 

·  Salmon: 450g (1 lb)

·  Salt Koji: 3 tablespoons (10% of the salmon weight)

 

Instructions:

·  Cut the salmon into single-serving portions and coat with salt koji.

·  Bake in a 400℉ oven for 10 to 15 minutes until lightly browned.
