The Somen Revolution: No-Boil Noodles & Easy Homemade Dipping Sauce

Think somen is just about boiling noodles? Think again! There's a “no-boil” method making the rounds online—and it might just change the way you make somen.
And if you’ve ever opened the fridge and realized you’re out of mentsuyu, don’t worry! We’re also sharing a 1-minute microwave dipping sauce you can whip up while your noodles are cooking.

What You’ll Need:
Medium frying pan
Water
Somen noodles
Instructions:
Bring water to a boil in a medium frying pan.
Add the somen noodles, then turn off the heat.
Cover with a lid and let sit for about 5 minutes.
Rinse the noodles under cold running water to cool and remove excess starch.

1-Minute Microwave Mentsuyu:
Authentic Flavor in No Time!
What You’ll Need:
Microwave-safe measuring cup
50 ml soy sauce
50 ml mirin (sweet cooking sake)
4 g bonito flakes
Instructions:
Pour equal amounts of soy sauce and mirin into a microwave-safe measuring cup.
Microwave for 1 minute.
Carefully remove from the microwave, add the bonito flakes, and stir. This makes a 3x concentrated mentsuyu.
Without straining the bonito flakes, dilute the mixture with 2 parts water (or ice) to 1 part mentsuyu to make a 1:3 ratio. Adjust the dilution to suit your taste!
