⚾ Family-Style Catering for the Mariners + Enoki Tofu 🍄
Updated: Oct 15

Oven-baked karaage, prepared for family-style catering.
🍱 From Our Kitchen: A First for the Mariners
Through an introduction from the Nationals Park manager, we had the wonderful opportunity to deliver family-style catering to the Seattle Mariners. This was our first time providing a visiting MLB team with shared dishes rather than individual bento boxes.
The menu included our oven-baked karaage, rice, and salmon onigiri. Thinking that some players might be less familiar with Japanese food, we suggested plain onigiri—white rice balls—instead of serving all the rice loose on compostable trays. They were happy to go with it!

Salmon onigiri and plain rice balls.
Our MLB orders come directly from each team’s registered dietitian. It’s inspiring to see how seriously top athletes take their nutrition, and a joy to share our Japanese home cooking with them.
A conversation at Eastern Market
A customer who loved our kinpira gobo (braised burdock root) mentioned that she could make it herself, so it felt a little pricey. We understood! Then she explained that the ingredients were hard to find nearby, and preparing just a small amount took a lot of effort.
She ended up taking some home.
It was a good reminder of what Harmonious Kitchen is here for: making it easy to enjoy dishes that are hard to find ingredients for or too time-consuming to make at home.

🍄 A Little More: Quick Recipe — Enoki Tofu

Enoki tofu—a simple dish to enjoy over rice or udon.
This recipe is inspired by Ms. Okuzono’s cooking. With tofu and enoki mushrooms, it’s an easy, comforting dish to make at home. It shares flavors with our Tofu Steak, which pairs king oyster mushrooms with a silky enoki sauce.
Time: about 15 minutes • Serves 2–3
Ingredients
Tofu: 1 block (300–400 g)
Enoki mushrooms: 1 pack (200 g)
Soy sauce and mirin: 2 tablespoons each
Water: 50 ml, plus water to dissolve the starch
Potato starch: 1 teaspoon
Ginger: 1 knob
Green onion: to taste
Optional: bonito flakes, 1 pack (4 g)
How to make it
Cut tofu into cubes. Shred the enoki mushrooms starting from the tops.
Add tofu, enoki, soy sauce, mirin, and 50 ml water to a frying pan. Cover and cook over medium heat for 3–5 minutes.
Turn off the heat. Push tofu and enoki to one side, add the potato starch dissolved in water to the liquid, and mix. Combine everything and cook for another 1–2 minutes.
Mix in ginger and the optional bonito flakes, then top with sliced green onion.
Enjoy over rice as a rice bowl, or as a topping for udon noodles.
